A classic retro kebab that is filled with a delicious egg mixture in the centre.

1 tbsp of ghee/oil
1 onion finely chopped
2 tsp garlic paste
½ tsp freshly grated ginger
2 tsp coriander powder
1 tsp ground cumin
1 chopped green chilli
½ tsp garam masala
½ tsp coarse black pepper
1 tsp crushed chilli
2 tbsp chopped coriander leaves
1 tsp salt
2 tbsp of thick yoghurt
500 g beef or lamb mince
FILLING INGREDIENTS
2 hard-boiled eggs coarsely grated
1 green chillies finely cut
1 small onion grated
2 tbsp finely chopped coriander
good pinch of salt
1 tbsp thick yoghurt
BATTER INGREDIENTS
1 gg beaten with 1 Tblsp cold water
2 tsp chana flour (gram flour)
100 ml il for frying
SERVING SUGGESTION

1Combine all the ingredients for the filling in a bowl and set aside for later use.
2Heat the ghee, add the onion, garlic, ginger and braise until the onion has softened.
3Add the coriander, cumin, green chillies, garam masala, black pepper, crushed chilli and braise for a few minutes and remove from heat.
4Add the yoghurt, coriander, salt and the fried ingredients into a blender and blend until smooth.
5Beat the mince well and combine with your blended ingredients.
6Make round balls with the mince, flatten them and press it down in the centre to fill with the egg filling. Slowly mould each kebab and flatten them gently.
7Mix chana flour, egg & water, into a smooth paste or batter.
9Dip each kebab into the batter and fry until golden brown. Remove from oil and drain on towelling paper.
