My Mother in-law’s fluffy and delicious white puri.

 1 cup Plain flour
 2 cups Salt
 1 tsp Baking powder
  cup Oil
 1 cup Water

Combine baking powder, flour and salt.

Rub the oil into the dry ingredients.

Make a soft dough (like roti) with water.

Let the dough rest for 10 minutes or more

Form a long sausage and break the dough into balls.

Each ball makes four roti.

Roll out each ball into a big roti of 4mm thickness.

Cut out four puris from each ball.

This recipe will give you a total of 24 puris.

Fry as normal in hot oil.

Enjoy with dry meats and roasts.
