A Quick & Easy - Masala Fried Fish from Madras.

 1 kg Fresh Hake Fillets
 2 tsp heaped ground green chillies
 2 tsp crushed garlic
 2 tbsp heaped ground coriander
 1 tsp heaped Food For Royalty Amchoor
 2 tsp heaped Food For Royalty Madras Spice
 1 ½ tsp salt
 2 tbsp lemon juice
 4 tbsp oil - For frying the fish
 2 tsp red chilli powder
 2 grated tomatoes
 1 tbsp tomato puree
 2 tbsp Fresh coriander (Dhania) + stalks
 1 tsp sugar
GARNISH
 Fresh chopped dhania
SERVING SUGGESTION
 Served with Caraway Potatoes | Chips and Fresh Hot Rotis.

Combine green chillies, garlic, amchoor, madras spice, salt and lemon juice.

Add fish to above marinade, cover and set aside for 10 minutes to infuse.

Heat 3 Tblsp oil on medium heat. Add red chilli powder allow to sizzle then add marinated fish and fry until firm and well coated with spices. Remove from pan and set aside.

Scrape all the masala from the pan, place in a bowl a d set aside.

Add 1 Tblsp Oil to the pan. Add tomato, puree, sugar, some chopped dhania & salts and braise well.

Add scaped masala back and braise slightly.

Place the fish in the gravy carefully.

Remove from heat and garnish with chopped dhania.

 1 kg Fresh Hake Fillets
 2 tsp heaped ground green chillies
