A Quick & Easy - Masala Fried Fish from Madras.
Combine green chillies, garlic, amchoor, madras spice, salt and lemon juice.
Add fish to above marinade, cover and set aside for 10 minutes to infuse.
Heat 3 Tblsp oil on medium heat. Add red chilli powder allow to sizzle then add marinated fish and fry until firm and well coated with spices. Remove from pan and set aside.
Scrape all the masala from the pan, place in a bowl a d set aside.
Add 1 Tblsp Oil to the pan. Add tomato, puree, sugar, some chopped dhania & salts and braise well.
Add scaped masala back and braise slightly.
Place the fish in the gravy carefully.
Remove from heat and garnish with chopped dhania.
