Combine the three flours, rub in the oil, ghee, and salt.
Make a non-sticky firm dough with tap water.
Cover and let rest for 5 minutes.
Roll out to 3mm thick, cut as desired, and fry in hot oil. Drain on paper towels. Delicious, dry and non-oily. Eat fresh!
