1 kg chicken - cut into portions
½ kg chicken filles - cut into portions
3 onions - thinly sliced
4 tbsp oil
2 tsp chilli powder
1 tsp tumeric - heaped
3 tsp ginger & garlic masala
3 tsp coriander powder
3 tsp Food For Royalty Gujarat Spice
2 tsp Food For Royalty Amchoor Substitute - Add 2 Tblsp Vinegar
2 tsp salt
4 tbsp lemon juice
2 tsp ground green chillies
¾ cup water
2 green chillies slit
4 tbsp fresh coriander with stalks - chopped
2 tomatoes - liquidised
5 fried potatoes
RICE:
3 ½ cups Basmati rice - Boil rice in salt & tumeric water until tender. Drain & set aside.
SERVING SUGGESTION
Serve with raita, poppadum and kachumber.
1Heat oil, add sliced onions and braise on a medium heat until soft and lightly browned.
2Lower heat, add in chilli powder, turmeric, ginger, garlic, coriander, Gujarat, Amchoor, lemon juice, ground green chillies and the slit green chillies.
3Add half cup of the water and braise spices on a low heat.
4Add chicken and braise well until its well browned and coated in spices. Can add a little more water if needed. Cover the pot and cook until chicken is tender.
5Add tomatoes and braise until slightly reduced.
6Add 2 Tblsp of the green coriander, mix well then layer with potatoes, rice and a sprinkle of ready fried brown onions.
7Add 1/2 cup of water, close the pot and allow to steam until all the juices have evaporated and rice is light and fluffy.
8Add remaining fresh coriander and ready fried brown onions.
