Gujarati Chicken Akni. A One Pot Chicken and Rice Dish made with Food For Royalty Signature Spice "Gujarat" the All Rounder Spice. This one pot Akni is quick and easy to make .. Vibrant colours, Fluffy Rice and Aromatic Flavours make this Akni the dish that everyone loves..
Heat oil, add sliced onions and braise on a medium heat until soft and lightly browned.
Lower heat, add in chilli powder, turmeric, ginger, garlic, coriander, Gujarat, Amchoor, lemon juice, ground green chillies and the slit green chillies.
Add half cup of the water and braise spices on a low heat.
Add chicken and braise well until its well browned and coated in spices. Can add a little more water if needed. Cover the pot and cook until chicken is tender.
Add tomatoes and braise until slightly reduced.
Add 2 Tblsp of the green coriander, mix well then layer with potatoes, rice and a sprinkle of ready fried brown onions.
Add 1/2 cup of water, close the pot and allow to steam until all the juices have evaporated and rice is light and fluffy.
Add remaining fresh coriander and ready fried brown onions.
