A delicious healthy meal!
1 large brinjal
2 medium tomatoes
3 boiling water
½ salt
1 white vinegar
2 lemon juice
2 chopped dhania
1 crushed cumin
½ brown sugar
1 small red onion – chopped
1 green chilli – chopped

Add brinjal, tomatoes and salt to boiling water

Remove tomatoes after 5 minutes. Peel and chop into fine cubes

Continue to boil brinjal for 10minutes until soft.

Remove skin and cop into fine cubes.

Combine tomatoes and brinjal with remaining ingredients and refrigerate.
