Aloo Fry with Chickpeas

 2 large potatoes, cubed
 1 tin chickpeas, rinsed and drained
 ¼ cup oil
 1 small onion – thinly sliced
 ½ tsp mustard seeds
 ½ tsp caraway seeds
 ½ tsp turmeric powder
 1 tsp crushed chilli
 1 tsp salt
 ½ cup warm water
 1 tsp green chilli paste
 2 tbsp lemon juice
 1 tsp crushed garlic
 1 tomato – grated
GARNISH
 1 tsp chopped green dhania
SERVING SUGGESTION
 Enjoy with fresh hot roti.

Heat oil on low. Add onion, mustard and caraway seeds.

Braise until onion softens.

Add potatoes, turmeric, green chilli paste, salt and mix well.

Add water, cover and cook until potatoes are tender.

Add chillies, lemon juice and garlic.

Add tomato and cook until reduced.

Add chickpeas and heat through.

Remove from heat and garnish.
